Quinoa is a superfood that is delicious AND really good for you!
Yes, it’s possible!
While quinoa is typically mistaken for a grain, it is actually a seed! It can however, be a great alternative for whole grains such as rice and barley. But why is it so good for you?
Besides being delicious, it has several beneficial qualities! Most notably, it is rich in protein, fiber, and riboflavin. But also, it is a complex carbohydrate with a low glycemic index, so it won’t spike your blood sugar! It’s gluten-free, and did I mention NON-fattening?!

Most importantly, RINSE! Quinoa is coated with an outer layer called saponin, which is very bitter. While most quinoa sold in stores comes pre-rinsed, I still recommend doing so again. Let it soak in water about 5 minutes, and then rinse!
In a pot with tight fitting lid, bring 1 Cup Quinoa, 11/4 Cup water (Chicken broth is better!), and a dash of salt to boil. Cover and reduce heat to simmer. Cook for about 16-18 minutes. Remove from heat, and let stand for 5 minutes. Fluff with fork and serve!
