Blueberries!

It’s time again.. for me to tell you why something is so good for you!

Topic of today: Blueberries!

 
Which is something I believe I could eat my weight in. Luckily, for me.. and anyone else who loves them… they have some wonderful qualities to benefit a healthy diet.

Blueberries are low in calories (Like, fewer than 100 calories a cup) Yay! They rank the highest of any fruit for antioxidants (which contribute to a stronger heart and cardiovascular function) and one cup delivers 14% of the recommended daily dose of fiber and nearly a quarter of the recommended  daily intake of vitamin C. They can prevent Urinary Tract Infections, as well as help with constipation and digestion. They are believed to help with the prevention of the cognitive decline associated with Alzheimer’s disease. Studies have shown they can help slow the progression of disease with people infected with Hepatitis C. They have also been shown to lower bad cholesterol, and help regulate blood pressure.

Now, what good would all this knowledge be without a yummy recipe?

Blueberry Greek Yogurt Banana Bread 

Speaking of healthy… This bread is made with Greek Yogurt instead of oils. What a great substitute!

Ingredients: Makes 1 loafphoto 1

  • 1.5 Cups All-Purpose Flour
  • 2 tsp. Baking Powder
  • ½ tsp. Kosher Salt
  • ½ Cup Brown Sugar
  • ¼ Cup Organic Cane Sugar
  • 2 Large Bananas (the brown ones are actually better)
  • 1 tsp. Vanilla
  • 2 Eggs
  • ½ Cup Greek Yogurt
  • 1 Cup Fresh Blueberries

Preheat oven to 350°


In a large bowl, smash bananas with a fork, until they are gooey and almost a liquid consistency. Then add the rest of the wet ingredients. (Eggs, vanilla, and Greek yogurt), and mix until well incorporated and there is no lumps. In another large bowl, combine the dry ingredients (flour, cane sugar, brown sugar, baking powder, and salt). Combine dry and wet ingredients, and mix  well.  Then gently fold blueberries into this mixture.

Pour batter into a greased loaf pan, and spread evenly. Place in the oven and bake for about 1 hour, or until the top becomes golden brown. (Or until a toothpick comes out clean) Remove from the over and let stand for at least 10 minutes before cutting.

Another great thing about this bread, is you can change it up. Add strawberries, or raspberries, or CHOCOLATE. The possibilities are endless here.

Now try to only eat one piece, I dare you!  I must be going now.. to have another slice!
