OK, that one was a little cheesy..my bad! No matter what team you are going for…You can’t have a party without food can you?! I didn’t think so! Well..since it is February (soup weather, YAY!), and currently freezing outside… I chose to do a yummy soup for our Super Bowl Sunday festivities. Taco Soup to be exact! This is the EASIEST soup you will ever make!
What you’ll need:
- 1 Lb. Ground Turkey (or beef, I just don’t like it.)
- 1 Can Dark Red Kidney beans
- 1 Can Black Beans
- 1 Can Sweet Yellow Corn, drained
- 1 Can Rotel
- 1 Small Jar of Taco Sauce
- 1 Pkg. Taco Seasoning
- 1 Pkg. Dry Ranch Mix
- Shredded Cheese and Sour Cream for topping, optional.. but why wouldn’t you?!
In a skillet, cook ground turkey (or beef) until browned. Set aside.
Then, in a large pot, pour in both cans of beans, and the juices, then fill both cans with water and add that also. Add all remaining ingredients to pot. (Drained corn, Rotel, taco seasoning, ranch mix, taco sauce, and the browned meat.)
Stir ingredients together until the ranch mix and taco seasoning are dissolved in the liquid.
Cover with a lid and simmer on medium/medium-high until the soup is warmed through.
Top soup with shredded cheese and sour cream (and crushed tortilla chips if you are feeling fancy!) and enjoy a bowl… or two!
