Eat More Strawberries!

Okay! Okay! So I paired them with chocolate… Strawberries still have a ton of nutritional benefits!

Strawberries are my FAVORITE! So this one makes me very happy. Not only does 1 cup of strawberries contain over 13% of the RDA of dietary fiber, it is also only 43 calories! Really! They also provide antioxidants and work as an anti-inflammatory. The combination of antioxidant and anti-inflammatory agents found in strawberries is well-known to fight against the onset of many different forms of cancer. They are also known to promote healthy eyes, and bone health. And of course, they are a wonderful source of Vitamin C! (1 cup contains an incredible 136% of the RDA of vitamin C)

Now for a recipe!

Strawberry Dark Chocolate Muffins

What you’ll need:

  • 1/2 Cup Butter, melted and cooled
  • 1 Cup Milk
  • 1½ tsp. Vanilla
  • 2 Eggs
  • 2¼ Cup Flour
  • ¾ Cup Organic Cane Sugar
  • 4 tsp. Baking Powder
  • ½ tsp. Salt
  • 1 Cup Chopped Strawberries, I used frozen
  • ½ Cup Dark Chocolate Pieces (Chop them up a bit if they are big pieces to prevent them from sinking to the bottom)

Preheat oven to 400°. Line muffin pan with liners, or spray with non-stick spray. In a bowl, whisk together butter, milk, vanilla, and eggs. Then, in another bowl, whisk together flour, sugar, baking powder and salt. Combine wet ingredients into dry ingredients, and mix until just combined. (Don’t over mix!) Gently fold strawberries and chocolate into the mixture. Divide batter into muffin pan, fill them to the very top.Bake for 10-20 minutes, depending on the size muffins you chose.

Makes 12 regular size muffins, or about 30-35 mini muffins. (I made the mini ones, of course, they’re precious!)
