I know some of you don’t like them, but I think I could probably live on Green beans alone and be satisfied. Just in case you were wondering… Green beans are very low in calories, and contain no saturated fat. Also they are a good source of dietary fiber, vitamins, minerals, and plant derived micro-nutrients.
That being said… to all that healthiness.. I go and add bacon! (It makes EVERYTHING better!) Also, I added red onions! This yummy side dish combines three of my most loved ingredients..making this one of my favorite recipes.
- 4 Cups Green Beans (You can cut them, but I leave them whole)
- 3 Pieces Pepper Bacon, chopped** (If you can’t find pepper bacon, simply add a fair amount of pepper to regular slices while its cooking. Same taste!)
- 1/2 Red Onion, chopped
In a pot, add chopped bacon and cook until crispy.
Once bacon is crispy, add red onions, and cook until soft, about 5-8 minutes.
Then add green beans and stir well, cover with lid and let cook for 2 minutes. Remove lid, stir, and repeat until the Green beans are a vibrant green and are tender but still have a bit of a crunch.
