Jeez, there are way too many delightful words in this title! The main purpose here is to tell why you should eat more apples… just forget about the other ingredients for a minute. (They aren’t QUITE as figure flattering!) But! Let’s just keep in mind that if you don’t really like apples by themselves, at least you are getting some in here! There are a ridiculous many things one can benefit from apples, so I will try to keep this short! Apples are super heart healthy, and also help reduce cholesterol. They have been shown to help prevent Alzheimer’s, Parkinson’s, and curb all sorts of cancers. Apples can also help you maintain a healthy weight and decrease your risk for diabetes. If that wasn’t enough…apples promote whiter, healthier teeth, and can help prevent cataracts of the eyes, boost your immune system, and help to detoxify your liver. And the very best thing, apples being so full of fiber, help make you feel fuller, longer..without costing you a ton of calories!
Now for the recipe!
What you’ll need:
For the Cake
- 1½ Cups Packed Light Brown Sugar
- 2 Cups All Purpose Flour
- 1/3 Cup Organic Cane Sugar
- 1 Stick Unsalted Butter, Softened (this is important) + enough to grease your cake pans.
- 2 Large Eggs
- 1 Cup Light Sour Cream
- 2 Cups Apples, diced
- 1 Tablespoon Whiskey (You can leave this out if you must…but why would you. Substitute water. )
- 1 tsp. Baking Soda
- 1 tsp. Ground Cinnamon
- 1 tsp. Vanilla Extract
- ½ tsp. Salt
For the Crumble Topping
- ½ Cup All Purpose Flour
- ½ Packed Light Brown Sugar
- 4 Tablespoon Unsalted Butter,softened (again very important that it be room temperature)
- 1/2 tsp. Ground Cinnamon
For the Sugar Glaze
- 1/2 Cup Packed Light Brown Sugar
- 2 Tablespoons Water
- 1/2 tsp. Vanilla Extract
Preheat the oven to 350°. Lightly grease cake pan ( makes one 13×9 or 2 small square cakes) with butter and set aside. In a large bowl, cream together butter, and both sugars until fluffy and well mixed. Add eggs one at a time, beating after the addition of each one.
In a separate bowl, whisk together flour, baking soda, salt, and cinnamon. add half of this mixture to the wet ingredients and blend. Now to this mixture, add sour cream, vanilla, and whiskey. Blend. Add remaining flour mixture. Blend until well combined. Use a rubber spatula to gently fold apples into the batter. Pour batter into prepared dishes and spread evenly.
To make the topping, in a bowl, combine sugar, flour, cinnamon, and butter. Mix these until it resembles coarse crumbs. Sprinkle the topping over the cake and bake until golden brown, and set. It will take about 35-45 minutes. Remove from the oven, and allow to cool in the pan for at least 10 minutes before trying to cut or remove.
To make the glaze, in a bowl combine sugar, vanilla, and water. Stir until well combined. This mixture will be thick, but still smooth and pourable. Drizzle the glaze over the cake and allow to harden slightly.
