Jalapeño Popper Chicken Sandiwiches

So.. most the time I try to feature at least some bit of healthy goodness, but I won’t even try on this post! It is fried and cheesy and all kinds of delicious. This would definitely have to be an indulgence meal, not a menu regular! I think by now we all know I love chicken, and I LOVE spicy foods. I had this idea recently and decided to make it up as I go. It turned out better than I expected! Chicken breast stuffed with cream cheese and jalapeños, then battered and fried. Also I made an easy Celery Ranch Dressing for topping. See all those wonderful words. All on one sandwich, I know! Ready yourselves!

Ingredients

  • 4-5 Boneless, Skinless Chicken Breast, use only the larger end and save the others for some other fun thing to cook
  • 4 oz. Cream Cheese
  • 1 Jalapeño
  • 2 Cups Flour
  • 2 Eggs
  • Whole Wheat Buns
  • Ranch Dressing
  • 1 Stalk Celery
  • Salt/Pepper to taste

Instructions

Let cream cheese become room temperature. Mince jalapeños in a food processor, or chop very small with a knife. blend with cream cheese, and place in the refrigerator until needed. (If you can do this step a little ahead, the colder the better. Also, it gives the cream cheese time to really absorb that hotness of the peppers.)

Then measure 1 cup of Ranch Dressing into a bowl. Mince celery into very small pieces and combine with the ranch and stir. Set in the fridge until needed.

Now, take your chicken and cut off the thickest end. Reserve other pieces of the chicken for some other fun recipe. You only want to use the larger end because it needs to be strong enough to hold stuffing. Once you have the chicken cut, take a knife and VERY VERY carefully, cut a slit into the side of each piece. Take the knife and hollow out the inside of the chicken breast, making a pocket. Try and keep the hole as small as you possibly can to ensure the filling stays inside. Take prepared cream cheese and stuff as much as you can into each piece of chicken without it overflowing. it needs to somewhat close back up.

Time to fry! Fill a saute pan about 1/3 of the way full with vegetable oil. Turn onto medium-high heat and let the oil get good and hot before placing the chicken in. Beat 2 eggs into a bowl with a little bit of water, or milk/cream if you have it in the fridge. Now measure 2 cups flour into a bowl and add salt/pepper, and mix together. Dip each chicken breast into eggs and then roll in flour. Do this step 2 times! Egg, Flour, Egg, Flour. Double battering will really help keep that cream cheese in the chicken. Once your oil is hot, place chicken into oil (Once again, over crowding your pan is not nice!). Cook chicken about 5-8 minutes on each side, or until golden brown.

Once chicken is done cooking.. toast buns, spread with the celery ranch you made, and any other condiments you like. I added a slice of cheese and pickles to mine and it was delicious!!! Serve with a yummy side like these Baked Sweet Potato Fries.
